It\u2019s so easy to make and incredibly versatile as well. If you don\u2019t have black beans you can use any beans you have in the cupboard.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-family: georgia, palatino, serif; font-size: 14pt; color: #e59191;\">This is chilli is warming and tastes even better the next day, after all the flavours have had even more time to mingle together &#8211; so it is brilliant for lunch the next day if you have any left overs<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-family: georgia, palatino, serif; font-size: 14pt; color: #e59191;\">enjoy!<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-family: georgia, palatino, serif; font-size: 14pt; color: #e59191;\">fi x<\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\">(Serves 4)<\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/span><\/p>\n<ul>\n<li><span style=\"font-family: georgia, palatino, serif;\">2 Sweet potatoes (peeled and chopped into chunks)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 white onion (roughly chopped)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">2 red peppers (de-seeded and sliced)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">2 tins of black beans (drained and rinsed)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 tsp hot chilli powder + 1 tsp paprika + 1 tsp cumin + 1 tsp ground coriander. 2 fat cloves of garlic (peeled and crushed)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">2 tins of chopped tomatoes + 300 mls of good quality vegetable \u00a0stock.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">To serve (completely optional!)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Yoghurt (coconut yoghurt is amazing if vegan or vegan sour cream)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Avocado<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Salsa of tomatoes, cucumber &amp; red onion<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Tortilla chips<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Brown rice<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: georgia, palatino, serif;\"><\/div>\n<\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/span><\/p>\n<ol>\n<li><span style=\"font-family: georgia, palatino, serif;\">Heat some oil in a heavy based pan (lid!!) and cook the onions till soft<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Tip in the peppers, spices and garlic. Big stir and cook for a few mins.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Add the potatoes, stir again.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Add the tomatoes &amp; stock, big stir, pop the lid on and cook for about 20 mins.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Keep an eye out and stir it every now and again. Add a little more water if you feel like it needs it.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">When the potatoes are soft add the beans and cook for another 5 minutes.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Whilst the chilli is cooking make your salsa if using this or cook your rice.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Turn the heat off when the chilli is cooked and leave until you\u2019re ready to eat.<\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: georgia, palatino, serif;\"><\/div>\n<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I adore this chilli recipe.
