It is thick, creamy and has a good punch of spice. This recipe is enough for about 5 servings so it is perfect for lunches at the office or you can freeze it to use later!<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/span><\/p>\n<ul>\n<li><span style=\"font-family: georgia, palatino, serif;\">5 Medium Sweet Potatoes<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">3 Medium Carrots<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">3 Large white Onions<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">2 Tins of Coconut Milk<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">4 Cloves of Garlic<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 Red Chilli &#8211; \u00a0if you want the soup to be less spicy only use 1\/2 a chilli<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">5cm knob of Fresh Ginger<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Handful of Fresh Coriander<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 L of Vegetable stock<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Salt &amp; Pepper to Taste<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Table Spoon of Coconut Oil for cooking<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: georgia, palatino, serif;\"><strong>To Serve (Optional)<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"font-family: georgia, palatino, serif;\">Chickpea Croutons<\/span><\/li>\n<li><span style=\"font-size: 12pt; font-family: georgia, palatino, serif;\"><em>Chilli Flakes <\/em><\/span><\/li>\n<li><span style=\"font-size: 12pt; font-family: georgia, palatino, serif;\"><em>Bread <\/em><\/span><\/li>\n<li><span style=\"font-size: 12pt; font-family: georgia, palatino, serif;\"><em>Fresh Coriander <\/em><\/span><\/li>\n<li><span style=\"font-size: 12pt; font-family: georgia, palatino, serif;\"><em>Salt &amp; Pepper <\/em><\/span><\/li>\n<li><span style=\"font-size: 12pt; font-family: georgia, palatino, serif;\"><em>Drizzle of olive oil <\/em><\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><\/div>\n<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/span><\/p>\n<ol>\n<li><span style=\"font-family: georgia, palatino, serif;\">Peel &amp; roughly chop the potatoes, Onions &amp; Carrots (I leave the skin on the carrots)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Heat the Coconut Oil in a large saucepan, tip in the onions and cook for about 10 minutes till soft.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Meanwhile peel the garlic, crush with the blade of the knife and roughly chop. Peel and roughly chop the ginger, chilli and coriander.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Add all of the above to the pan with the onions, stir, cook for about 5 minuets.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Add the carrots &amp; potatoes, give the contents of the pan a good stir and cook for a couple minuets.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Pour in the coconut milk &amp; the stock, stir everything together and bring the pan to the boil. Bring the heat down to a simmer and let it cook for about 15 &#8211; 20 minuets till the carrots &amp; potatoes are nice and soft.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Take the pan off the heat. With a handheld stick blender blend the soup in the pan.
