The beetroot &amp; coconut yoghurt goes with so much as well so you can make a big batch and keep in the fridge for a week or so. Same goes for the salsa, it goes with so much &#8211;\u00a0avocado toast, eggs, salads, chilli, fish .. the list goes on and on.\u00a0<\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><em>Serves 4<\/em><\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><strong>Sweet Potato &amp; Chickpeas\u00a0<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 Large Sweet Potato (peeled and cut into bite sized chunks)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 Can of Chickpeas (drained and rinsed)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 Medium Red Onion (Peeled and roughly chopped)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">2 Tablespoons of Harissa Paste<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">50 mls of water<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1\/2 Red Chilli (de seeded and roughly chopped)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Salt and pepper to taste<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 Teaspoon of dried oregano<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Tablespoon of Olive Oil<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: georgia, palatino, serif;\"><strong>Basic Salsa\u00a0<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"font-family: georgia, palatino, serif;\">3 Large Vine tomatoes (finely chopped)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1\/2 Standard Cucumber (finely chopped)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1\/2 Red Chilli (De-seeded and roughly chopped)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 Small red onion (peeled and Finely chopped)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 Small tin of Sweetcorn (drained and rinsed)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Small Handful of Fresh Coriander, roughly chopped stalks and all.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: georgia, palatino, serif;\"><strong>Coconut &amp; Beetroot Yoghurt\u00a0<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"font-family: georgia, palatino, serif;\">250g of Dairy Free Coconut Yoghurt<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 Ball of Beetroot &#8211; pre cooked (roasted or steamed &#8211; not pickled)<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 Small Clove of Garlic<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 Sprig of Fresh Dill<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">3 Fresh Mint Leaves<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li><span style=\"font-family: georgia, palatino, serif;\">Corn Wraps<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Greens like spinach or mixed salad<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Drizzle of Coconut yoghurt<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Extra Herbs like fresh coriander<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><\/div>\n<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><strong>The Smokey filling<\/strong><\/span><\/p>\n<ol class=\"instructions\">\n<li class=\"instruction\"><span style=\"font-family: georgia, palatino, serif;\">Heat the oil in a heavy based sauce pan with a lid &#8211; keep to a medium heat. Add the Onion and cook till soft.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Add the Sweet potato, chickpeas , chilli, oregano and the Harissa paste. Give the contents a good stir so everything is coated. Cook for about 5 minuets. Adding a little water every now and again.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Put the lid on the pan and cook for about 10\/15 minuets. Adding water every now and again and giving the pan a good stir and season as you go. \u00a0Make the Salsa and Sauce whilst this is cooking.<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">When the potatoes are nice and soft take the pan off the heat and keep warm till you are ready<\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: georgia, palatino, serif;\"><strong>Salsa<\/strong><\/span><\/p>\n<ol>\n<li><span style=\"font-family: georgia, palatino, serif;\">Put all of the ingredients into a Tupperware box, snap the lid on and give it a good shake to mix it all together.<\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: georgia, palatino, serif;\">Coconut Beetroot Yoghurt Sauce<\/span><\/p>\n<ol>\n<li><span style=\"font-family: georgia, palatino, serif;\">Add all the ingredients to a blender and blend till you have a nice smooth consistency &#8211; add a little water or some more yoghurt if you want.<\/span><\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><strong>Assemble the wraps and dig in!\u00a0<\/strong><\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><\/div>\n<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\">I hope you love these as much as i do!<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\">Fi<\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\">xx<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>These wraps are one of my favourite things to make &#8211; I like to freeze the potato and chickpea\u00a0filling so i can grab it when I&#8217;m stuck for dinner.
