You only need a handful of pantry items to make this and you can add in any extra veggies you might have that need using up.\u00a0 This recipe serves 4 so you can keep it in the fridge so you&#8217;re covered for lunches for a few days.\u00a0<\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/span><\/p>\n<ul>\n<li class=\"ingredient\"><span style=\"font-family: georgia, palatino, serif;\">120g of Red Split Lentils<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 white onion &#8211; finely diced\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">2 cloves of garlic &#8211; minced\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 Tin of chopped tomatoes\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">350 mls of vegetable Stock\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">2 teaspoons of rose harissa\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 teaspoon ground cumin\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1\/2 teaspoon smoked paprika\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1\/2 teaspoon ground coriander\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">2 Tablespoons of Olive Oil\u00a0\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Salt and Pepper to taste\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Coconut yogurt to serve\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">Chopped basil &amp; parsley to serve\u00a0<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: georgia, palatino, serif;\"><\/div>\n\u00a0<\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/span><\/p>\n<ol class=\"instructions\">\n<li class=\"instruction\"><span style=\"font-family: georgia, palatino, serif;\"><span style=\"font-family: georgia, palatino, serif;\">Heat a non stick pan over a medium heat, add the oil and then the onions. When the onions are soft add in the garlic, coriander, paprika and cumin. Cook for about 5 minuets then tip in the tomatoes and the harissa. Cook for a couple minuets then add in the lentils and the stock. You&#8217;ll want the lentils to be completely covered, if they aren&#8217;t\u00a0add in some more water.\u00a0 Bring the pan to the boil then reduce to a simmer.
