I love everything about this cake recipe and it makes my kitchen smell delicious. This recipe isn&#8217;t what I would call &#8220;healthy&#8221; but its so tasty I didn&#8217;t want to change it as of yet.\u00a0<\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\">Makes 12<\/span><\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/span><\/p>\n<ul class=\"ingred-list \">\n<li><span style=\"font-family: georgia, palatino, serif;\">125 g soft brown sugar<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">125 ml melted coconut oil\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">2 large free-range eggs<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">225 g plain flour<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 teaspoon ground cinnamon<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 teaspoon ground ginger<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 teaspoon all spice\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1\/2 teaspoon baking soda<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1\/2 teaspoon baking powder<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">1 orange (juiced, zest half of the orange skin and peel the other half with a zester into thin strips for topping)\u00a0<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">200 g grated carrots<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">200 g cream cheese<\/span><\/li>\n<li><span style=\"font-family: georgia, palatino, serif;\">110 g icing sugar<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: georgia, palatino, serif;\"><\/div>\n<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: georgia, palatino, serif;\"><div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/span><\/p>\n<ol class=\"instructions\">\n<li class=\"instruction\"><span style=\"font-family: georgia, palatino, serif;\">Turn your oven to 180&#8242; (fan) and line your muffin tray with muffin cases. <\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: georgia, palatino, serif;\">In a large mixing bowl cream the sugar and eggs together, add in the coconut oil and orange zest. Then fold in the flour, spices &amp; carrot.<\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: georgia, palatino, serif;\">Using an ice cream scoop or a dessert spoon, scoop the batter into the muffin cases and then bake for about 20 minuets. Poke with a skewer and if it comes out clean they are done. Remove for the oven and cool on a rack.<\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: georgia, palatino, serif;\">Beat the sugar and cream cheese together and spread over the cooled muffins. Or use an icing bag to pipe it over the muffins.
