Potato rostis, hash browns.. whatever you want to call them are one of the potato gods gift to mankind. They take a little bit of effort but they are so delicious, it’s totally worth it.
I’m just giving you the recipe for the rosti itself. Go ahead and top with whatever you like, or just duck them in ketchup (I have done many time myself)
Ingredients
2 sweet potatoes, peeled and grated.
1 medium egg
1 teaspoon of plain flour (or Gf)
1/2 teaspoon of ground cumin
1/2 teaspoon of smoked paprika
Salt and pepper to taste
Directions
Place the grated sweet potatoes into a clean tea towel, bring the sides together and twist into a bundle, squeezing out as much moisture as possible from the potatoes. Transfer to large mixing bowl, add the egg, flour, spices, salt and pepper. Mix together well using your hands.
Heat 2 tablespoons of oil (rapeseed is good) in a large frying pan. Using a tablespoon scoop out some of the Rosti mix into the pan and smush down to flatten it. Let cook for 5 minutes or so on each side till crisp and golden. Don’t be tempted to fiddle with the rosti when it’s cooking because it won’t bind and will just fall apart. Repeat until you’ve used all the mix, it should make 4-6 depending on how big you make them. Keep warm in a warm oven till you’ve made them all and your ready to eat.
